In time for the new year, when we're setting new year resolutions, to change our bad habits for the better, is the release of the LOVE Kitchen recipe book from Absolute Sanctuary and Yoga Centre in Koh Samui, Thailand.
If you have a plan, dream, desire or determination to eat more health consciously, well here is a little sneak insight to what the new LOVE Kitchen recipe book will have in store for you...
FRESH CATCH THAI SPA STYLE
Ingredients:
175gm white snapper fillet, skinned
Juice of 1/2 lime
Pinch of sea salt & black pepper
1 Banana leaf
1 Stalk lemon grass, cut into short lengths
3 Pieces of galangal (or ginger)
1 Shallot, thinly sliced
3 Kaffir lime leaves

Special Thai Chili Sauce:
1 Red chili, minced
1 Green chili, minced
2 Cloves garlic, minced
2 Stalks coriander root, minced
2 Tablespoons fish sauce
2 Teaspoons lime juice
1 Tablespoon palm sugar syrup

Method:
Cut the fish into 3 slices, season with lime juice, salt and pepper.
Place fish slices on banana leaf. Layer on top of the fish the lemon grass, galangal, shallot and lime leaves.
In your bamboo steamer, steam fish until just done. About 10mins.
Make the sauce while fish is being steamed by combining chillies, garlic and coriander root together in a bowl. Gently whisk the fish sauce, lime juice and palm sugar syrup.
Serve steamed fish with sauce on the side.
